Ingredients

2.5 cups Iya’s Cassava Flour
5 Large Eggs
2 Tbsp Apple Cider Vinegar
2 Tbsp Honey or Pure Maple Syrup
½ cup Butter (can swap with avocado oil or any oil)
½ cup Warm Water
2 Tbsp Yogurt (optional)
1 ½ tsp Baking Powder
1 tsp Salt
Directions
Preheat oven to 350 F. Spray a 9x5 loaf pan or line with parchment paper
In a large bowl, mix all dry ingredients
In another bowl, beat eggs till fluffy. Next, gently add apple cider vinegar, maple syrup, melted butter, yogurt and water without mixing
Gently whisk wet mix into dry mix till smooth. Pour cassava batter into baking pan. Bake for about 50 - 60 mins.
Once baked, allow to cool before slicing
Enjoy with sliced avocados, scrambled eggs, etc.
