Piri-Piri Roasted Turkey
1 10-20 lb Turkey
5oz pack Iya’s Piri-Piri Seasoning
1 cup melted butter (can swap with extra virgin olive oil)
2 apples – cut into medium sized chunks
1 heaped tsp of fresh rosemary
1/2 tsp sage
1-2 tsp salt
Optional for extra aroma that will bring everyone to the kitchen
Prep 10 mins (Thawed Turkey):
For frozen turkeys - Thaw the turkey in the refrigerator for about 2 – 3 days (approx. 24 hours for every 5 lbs.).
Now our turkeys are thawed let’s get to it!
Remove the middle cavity contents i.e., the neck, giblets and anything else stuffed in there etc. – set aside because so no waste, we are using it all! Then pat the bird dry with paper towels.
Turkey Seasoning 10 mins:
Mix entire pack of Iya’s Piri-Piri Seasoning with the melted butter, rosemary, sage and salt
Rub turkey – cover every part: under the skin, around the skin (use a brush or your hands), and inside the turkey. Make sure to be generous with the inside
Tuck the wings under the turkey, tie the turkey legs
Place Turkey in a roasting pan
Optional - Let sit for about 30 mins – at this point you can already see this turkey is going to be a winner delicious, let’s high five!
Roast – approx. 2 hrs. 30 mins:
Preheat Oven to 325 F
Roast approx. 15 mins per lbs. so for my 10 lbs. turkey, I’ll roast for about 2 hrs. 30 mins
Check turkey every 30 mins and baste turkey with turkey drippings/juices in the pan
When turkey is almost done - cover with foil for 30 mins – remove foil for the last 5 – 10 mins to crisp turkey skin without drying the turkey
When turkey is cooked, remove from oven and let sit for at least 20 mins before carving
