Jalapeño Cheddar Cornbread Waffles
1 - 12oz bag of Iya Foods Cornbread Mix
4 tablespoons Iya Foods Plantain Flour
1/3 cup neutral oil
2 cups of full fat coconut milk
3/4 cups shredded cheddar cheese
2 jalapeños, diced
1 red bell pepper, diced
Cayenne pepper to taste
Combine the oil, eggs and coconut milk together in a large bowl, add cornbread mix and plantain flour, mix well.
Fold in the cheese, jalapeños, bell peppers and cayenne.
Mix is ready to use immediately with your favorite waffle iron. Be sure to cook the waffles until very brown and crispy, for best results.
Top waffles with avocado, tomatoes, cilantro and a squeeze of lime.
