Ingredients
1 cup (2-sticks) butter softened
1 cup firmly packed brown sugar
½ cup white sugar
1 cup peanut butter
2 eggs
1 Tablespoon vanilla

1 ½ cup Gluten Free Baking Flour
1 tsp baking soda
3 cups oatmeal (quick oats)
2 cup (we recommend peanut m&ms)
(Instead or in addition, add peanut butter chips, chocolate chips, peanuts, walnuts, coconut flakes)
Directions
Heat the oven to 350 degrees F. In a mixing bowl mix on medium speed the butter, brown sugar, and white sugar until combined. Then add the peanut butter until just combined.
On a low speed add the eggs and vanilla until just combined. On a low speed add the gluten free four and oats. Once combined, add the m&ms or other mix-ins until just combined.
Scoop onto a parchment lined baking sheet and bake for 8-10 minutes.
