Ingredients

1 cup Iya Foods gluten free baking flour

1/4 cup Iya Foods tapioca starch flour
1/2 teaspoon salt
1 1/4 cup milk, slightly warm
4 large eggs
2 tablespoons melted butter
4 tablespoons melted butter, for pans
Directions
Preheat the oven to 400 Degrees F. Drizzle about 1 teaspoon of melted butter in each cup of the popover pan or muffin pan and place in the oven while you make the batter.
In a bowl, mix the milk, eggs and 2 tablespoons melted butter. Mix until fully incorporated. then add the flours and salt and whisk until batter is smooth.
Pour the batter into the hot pan, about 2/3 of the way full. Place in the oven and bake for 20 minutes. Then reduce the oven heat to 350 Degrees F. and bake for an additional 10-15 minutes until the popovers are puffed and browned. Do not open the oven for the first 30 minutes of baking.
Remove from pan immediately and serve hot. You can dust with powdered sugar and serve with jam. Let's Eat!
