Power Veggie Muffins – Makes 12

Ingredients:
- 1 ½ cup Iya Foods Cassava Flour
- 1 ripe banana
- 2 large eggs
- ½ cup milk (any milk)
- ½ cup sugar
- 1 cup water
- ¼ cup oil
- ¼ cup pure maple syrup or 2 Tbsp honey
- 2 Tbsp Iya Foods Spinach Powder
- 1 Tbsp Iya Foods Celery Juice Powder(can swap this with Iya Foods Cabbage Powder)
- 1 Tbsp Iya Foods Kale Powder
- 1 tsp vanilla extract
- 2 tsp baking powder
- ½ tsp ground cinnamon or nutmeg
- ¼ tsp baking soda
- ¼ tsp salt
Instructions:
- Preheat oven to 375 degrees and grease muffin baking pan
- In a medium bowl, mix all the dry ingredients and set aside
- Blend all the wet ingredients and pour into dry ingredients – stir and make sure no lumps. You can also just blend all.
- Fill each muffin tin and bake for about 25 mins or until toothpick comes out clean
