Power Veggie Muffins – Makes 12

Power Veggie Muffins, Made from whole food powders

Ingredients:

  • 1 ½  cup Iya Foods Cassava Flour
  • 1 ripe banana
  • 2 large eggs
  • ½ cup milk (any milk)
  • ½ cup sugar
  • 1 cup water
  • ¼ cup oil
  • ¼  cup pure maple syrup or 2 Tbsp honey
  • 2 Tbsp Iya Foods Spinach Powder
  • 1 Tbsp Iya Foods Celery Juice Powder(can swap this with Iya Foods Cabbage Powder)
  • 1 Tbsp Iya Foods Kale Powder
  • 1 tsp vanilla extract
  • 2 tsp baking powder
  • ½ tsp ground cinnamon or nutmeg
  • ¼ tsp baking soda
  • ¼ tsp salt 

Instructions:

  1. Preheat oven to 375 degrees and grease muffin baking pan
  2. In a medium bowl, mix all the dry ingredients and set aside
  3. Blend all the wet ingredients and pour into dry ingredients – stir and make sure no lumps. You can also just blend all.
  4. Fill each muffin tin and bake for about 25 mins or until  toothpick comes out clean
