OMG Chocolate Cake – Grain-Free, Gluten-Free, Low-Calorie

Cauliflower Cassava chocolate cake


  • 2 cups Iya Foods Cassava Flour
  • ½ cup Iya Foods Cauliflower Powder
  • 1 cup unsweetened cocoa powder
  • 1 cup maple syrup
  • 1 cup mayonnaise
  • ½ cup milk (can also use almond milk)
  • 3 eggs
  • 2 cups sugar
  • ¾ cup oil or melted butter
  • 2 tsp baking soda
  • 2 tsp vanilla extract
  • ½ tsp salt
  • 1 cup hot water
  • Chocolate Glaze
  • 6 oz unsweetened chocolate chips
  • 6 Tbsp unsalted butter 


  1. Preheat oven to 350F. Grease baking pan and line with parchment paper.
  2. Wet mix - Combine sugar and oil or butter until smooth then add all wet ingredients except the hot water (this comes last)
  3. Dry mix - Mix all dry ingredients in separate bowl and then pour in wet mix in until smooth
  4. Carefully mix in hot water (this is what increases cake moisture)
  5. Pour batter into pan and bake in the preheated oven for 30-35 mins or until a toothpick comes out clean
  6. For Chocolate Glaze – Microwave chocolate chips for a few mins till melted. Next stir in butter till smooth. Allow to cool and glaze cake 
Let cool & serve
Tip – you can use a blender!
