OMG Chocolate Cake – Grain-Free, Gluten-Free, Low-Calorie

Ingredients:
- 2 cups Iya Foods Cassava Flour
- ½ cup Iya Foods Cauliflower Powder
- 1 cup unsweetened cocoa powder
- 1 cup maple syrup
- 1 cup mayonnaise
- ½ cup milk (can also use almond milk)
- 3 eggs
- 2 cups sugar
- ¾ cup oil or melted butter
- 2 tsp baking soda
- 2 tsp vanilla extract
- ½ tsp salt
- 1 cup hot water
- Chocolate Glaze
- 6 oz unsweetened chocolate chips
- 6 Tbsp unsalted butter
Instructions:
- Preheat oven to 350F. Grease baking pan and line with parchment paper.
- Wet mix - Combine sugar and oil or butter until smooth then add all wet ingredients except the hot water (this comes last)
- Dry mix - Mix all dry ingredients in separate bowl and then pour in wet mix in until smooth
- Carefully mix in hot water (this is what increases cake moisture)
- Pour batter into pan and bake in the preheated oven for 30-35 mins or until a toothpick comes out clean
- For Chocolate Glaze – Microwave chocolate chips for a few mins till melted. Next stir in butter till smooth. Allow to cool and glaze cake
Let cool & serve
Tip – you can use a blender!
