Butternut Squash Soup – Grain-Free, Gluten-Free, Low-Calorie

Ingredients:

  • 2 cups Iya Foods Butternut Squash Powder
  • 5-6 cups chicken broth (can swap with any broth)
  • ½ cup heavy cream (can swap with plain yogurt)
  • ½ cup chopped carrots
  • 1 Tbsp avocado oil (or any oil)
  • 1 tsp Iya Foods Chili Flakes (this is essential, our chili pepper is potent)
  • 1 tsp Iya Foods Whole Garlic
  • 1 tsp Iya Foods Turmeric
  • ½ tsp thyme
  • 1 tsp onion powder or finely chopped half onion
  • 1 Tbsp salt
  • For toppings – anything you want, option below
    • Peas
    • Croutons
    • Sweet corn

Instructions:

  1. In a large pot combine all the ingredients except for the heavy cream  or milk
  2. Bring to a simmer on low heat for about 15 mins
  3. Slowly add stir in the heavy cream and bring to a simmer
  4. Serve hot with garnish of choice

Tip – You can blend all the ingredients (except toppings) and cook in an instant pot for 20 mins or use stove top
