Butternut Squash Soup – Grain-Free, Gluten-Free, Low-Calorie

Ingredients:
- 2 cups Iya Foods Butternut Squash Powder
- 5-6 cups chicken broth (can swap with any broth)
- ½ cup heavy cream (can swap with plain yogurt)
- ½ cup chopped carrots
- 1 Tbsp avocado oil (or any oil)
- 1 tsp Iya Foods Chili Flakes (this is essential, our chili pepper is potent)
- 1 tsp Iya Foods Whole Garlic
- 1 tsp Iya Foods Turmeric
- ½ tsp thyme
- 1 tsp onion powder or finely chopped half onion
- 1 Tbsp salt
- For toppings – anything you want, option below
- Peas
- Croutons
- Sweet corn
Instructions:
- In a large pot combine all the ingredients except for the heavy cream or milk
- Bring to a simmer on low heat for about 15 mins
- Slowly add stir in the heavy cream and bring to a simmer
- Serve hot with garnish of choice
Tip – You can blend all the ingredients (except toppings) and cook in an instant pot for 20 mins or use stove top
