Butternut Pancakes– Grain-Free, Gluten-Free, Low-Calorie

Ingredients (4-6 Servings):

  • 1 ½ cups Iya Foods Cassava Flour
  • ½ cup Iya Foods Butternut Squash Powder
  • 1 cup vanilla yogurt
  • 2 eggs
  • 1 cup oat milk (can swap with any milk)
  • 2 Tbsp oil or melted unsalted butter
  • 2 Tbsp of pure maple syrup
  • 2 tsp brown sugar 
  • 2 tsp baking powder
  • ¼  tsp sea salt
  • ¼ tsp cinnamon or nutmeg

Instructions:

  1. 1.Mix all the dry ingredients
  2. 2.Mix all the liquid ingredients and slowly mix in the dry ingredients
  3. 3.Heat up gridle or pan.
  4. 4.Pour in griddle and leave for about 3 mins on each side till golden brown. (Add some water if too thick or more flour if too runny)
Serve hot with your favorite toppings
Tip – Follow same recipe for waffles
