Spicy Coconut Shrimp & Lettuce

Iya Foods Shrimp coconut seasoning

Ingredients (2 servings):

½  lbs. Shrimp
3 tbsp Iya Foods spicy coconut seasoning
5 bibbs of lettuce wraps
½ cup vegetable stock or water
½ tsp Iya Foods Garlic Seasoning
A pinch Iya Food Chili Flakes
A pinch Iya Foods Ginger Ground
¾ tsp Iya Foods Turmeric Ground
1 tsp salt or to taste

 

Instructions:

1.Heat pan – add vegetable stock, spices & seasonings including spicy coconut seasoning – let simmer on low  for 6-10 mins
2.Add shrimp – let simmer for another 5 mins. Adding the vegetables tock helps create a juicy sauce that goes very well with the lettuce
3.Serve on Lettuce

Tips

Rinse your lettuce in warm water and salt before using
You can also chop your lettuce or buy ready to eat lettuce from a good grocery store

Broccoli Cauliflower Soup

Makes about 4 servings

Ingredients:

5 cups broccoli florets (can buy frozen)
3 cups chopped cauliflower (can buy frozen)
3 cups chicken broth (can use vegetable broth)
1 tsp butter or avocado oil (can skip oil to reduce calories)
1 cup sweet corn
3 tsp Iya Foods Pepper-Soup Seasoning
¼ tsp Iya Foods Yellow Habaneros Pepper or Iya Foods Chili Pepper Flakes
1 Tbsp Iya Foods Vegetable Soup Seasoning
1 tsp sea salt

 

Instructions:

Blend broccoli, cauliflower and broth till smooth 
Pour blended broccoli & cauliflower mix into medium sized pot, add all the other ingredients into the pot including the seasonings. Cook on low heat for about 15 mins.
Serve hot with one slice of a healthy bread or swap out with one grilled or baked sweet potato

Spicy Garlic Chicken Recipe -


Ingredients (4 Servings)

4 chicken breasts
2 tbsp. Iya Foods Garlic with Garlic Skin ground
¼ to ½ tsp Iya Foods Chili Pepper
3 tsp Iya Foods Piri-Piri Seasoning 
Salt as desired


Instructions:

Mix salt and seasonings then rub chicken. 
Roast at 375F or cook thoroughly in skillet or oven
Serve hot with riced cauliflower
Tip – add diced onions, tomatoes and peppers for extra juiciness

One- Pot Riced Cauliflower

 

To Make Riced Cauliflower Jollof

Ingredients (2 -3 servings):

12 oz of Riced Cauliflower Medley  (Frozen Riced Cauliflower works great)
2 tsp. Iya Foods One-Pot Riced Cauliflower seasoning
½ tsp. sea salt
1 Tbsp Avocado oil (or can use any oil or to reduce calories you 0 calorie pan spray)
Optional but recommended
½ tsp Iya Foods Garlic with Garlic Skin Ground (also available Amazon prime)
A pinch Iya Foods African Chili Flakes (also available Amazon prime)

Instructions:

1.Heat medium sized pan with avocado oil
2.Add your riced cauliflower medley or riced veggies
3.Add Iya Foods One-Pot Riced Cauliflower seasoning. Then add Iya Garlic and Iya Chili
4.Stir and let simmer (uncovered for 10-12 mins)
5.Serve hot with preferred sides

Grilled Piri-Piri Fish

Piri Piri Grilled Fish 

Ingredients

4 6oz fish cuts
2 tsp Iya Foods Piri-Piri Seasoning 
½ teaspoon Iya Foods Ground Yellow Habanero Pepper 
1 tsp Iya Foods Garlic with Garlic Skin Ground
Diced tomatoes, onions and peppers
Salt to taste


Instructions:

1.Make deep incisions in fish for marinade to seep in
2.Sprinkle Piri-Piri seasoning, salt and then top with diced onions, tomatoes and peppers
3.Preheat oven to 350 and grill for about 30 minutes or until almost fully cooked
4.Serve hot with roasted potatoes or grilled unripe plantains

To Make Spicy Fried Riced Cauliflower

 

        Ingredients (Approx. 4 servings):

4-6 cups of riced cauliflower (Frozen Riced Cauliflower works great)
2 - 3 tsp. Iya Foods Fried Riced Cauliflower seasoning
3 Tbsp extra virgin olive oil
1 cup chopped onions
1 cup mixed veggies of choice
1 cup cooked chopped meat, chicken or sausages
½ tsp salt
Optional but recommended
½ tsp Iya Foods Garlic with Garlic Skin Ground (also available Amazon prime)
A pinch Iya Foods African Chili Flakes (also available Amazon prime)

Instructions:

1.Heat medium sized pan with oil and sauté onions
2.Next add your riced cauliflower or veggies and all the Iya Foods spices listed above
3.Let simmer for about 10-12 mins
4.Serve hot with preferred sides

Fried Riced Cauliflower & Beans (less than 150 calories/serving)

Iya Foods fried riced cauliflower and beans

Makes about 4 servings:

Ingredients:

4 cups Riced Cauliflower (Frozen Riced Cauliflower works great)
1 can cooked black beans (can use red beans or pinto beans)
2 tsp Iya Foods Fried Riced Cauliflower seasoning
1 tsp Iya Foods Chili pepper ground
1 tsp Iya Foods Garlic with Garlic Skin
½ cup sweet corn
¼ cup chopped cilantro
½  chopped yellow onion
1 chopped tomato
½ tsp sea salt
2 Tbsp vegetable oil

Instructions:

1.Heat oil in medium pan
2.Combine everything in the medium pan
3.Cover and let simmer for about 10 – 12 mins
4.Serve hot with avocado slices if desired
