Thieboudienne: Senegalese Jollof Rice (similar to Jambalaya)

Makes about 4-6 servings:
Ingredients:
• 3 cups of white rice (short grain, Jasmine or basmati)
• 3 4oz fish filets (red snapper or any preferred fish. Can also use smoked salmon)
• 1 cup Iya Foods One - Pot Simmer Sauce (Savory Vegetable, Chicken or Beef)
• 1 tsp Iya Foods Jollof pilaf seasoning
• 1 tsp Iya Foods Garlic with Garlic Skin
• ½ teaspoon sea salt
• 1 cup of chopped parsley
• 1 cup of chopped green onions
• 1 large onion sliced
• 1 pounds vegetables (carrots, green pepper, eggplant)
• 1 pounds potatoes
Instructions:
1. Grill or fry your fish then set aside
2. Grill or boil your potatoes with the vegetables then set aside
3. Combine rice, Iya Foods One - Pot Simmer Sauce, Jollof seasoning, Garlic and Salt in a 6 - quart Instant Pot or a medium sized pot. Add water at ratio 2:1 (two cups of water for 1 cup of rice)
4. Cover, seal and push ‘Rice’, if your Instant - Pot does not have a ‘rice’ function, select ‘manual’ and then set for 10 mins on high pressure. For medium sized pot, cover and cook for 20 – 30 mins on medium heat.
5. Once pressure is released, gently stir and serve. For medium pots, stir and serve
6. Stir in the potatoes, vegetables with jollof rice and top with fish
