1. Combine rice, oil, spices and salt in a 6 - quart Instant Pot or a medium sized pot. Add water at ratio 2:1 (two cups of water for 1 cup of rice)
2. Cover, seal and push ‘Rice’, if your Instant - Pot does not have a ‘rice’ function, select ‘manual’ and then set for 10 mins on high pressure. For medium sized pot, cover and cook for 20 – 30 mins on medium heat.
3. Once pressure is released or medium pot method is cooked gently stir in red beans and sweet corn, let simmer for 5 mins. Garnish wit cilantro
