Spicy Cauliflower Jambalaya (less than 250 calories/serving)

Makes about 6 servings:

Ingredients

  • 6 cups Riced Cauliflower (Frozen Riced Cauliflower works great)
  • 6oz. smoked sausage, cut into ¼ inch slices
  • ½ lbs. shrimp
  • ½ cup any tomato-based simmer sauce (can use pasta sauce)
  • 2-3 tsp. Iya Foods One-Pot Riced Cauliflower seasoning
  • 2 Tbsp Iya Foods Vegetable Mix
  • 3 Tbsp Avocado Oil
  • ¼ tsp salt

Instructions

  1. In medium sized pot, heat oil then add simmer sauce, chopped sausage and seafood
  2. Add all other ingredients, spices and riced cauliflower
  3. Str and let simmer uncovered for approx. 8 mins
  4. Serve hot. Garnish with sliced scallions, if desired.
