One-Pot Veggie Bowl

Ingredients (4 Servings):

  • 3 cups of kale or spinach (any combination of chopped greens usually works)
  • 4 cups any rice or riced vegetables
  • 2 cups chopped broccoli
  • 1 cup sweet peas
  • 2 Tbsp Iya Foods Vegetable  seasoning
  • 1 tsp Iya Foods Garlic with Garlic Skin
  • ¼ cup Avocado oil (or any oil)
  • 2 cups broth or stock (Vegetable broth or chicken broth)
  • Salt to taste Optional
  • 1 lbs cooked chopped meat, chicken or sausages (if vegan can swap with vegan meats)

Instructions:

  1. 1.In a medium sized pot and on medium heat – cook rice with broth or for 25 mins
  2. 2.Then add spices, oil and vegetables and let cook for 5 mins
  3. 3.Serve hot
Tips:
  1. If using Instant pot – add all ingredients except the vegetables and cook with rice function. Microwave your vegetables or steam in medium pot then just stir in at the end when pressure is released and rice is cooked
  2. If using riced cauliflower, cook for 5-10 mins because riced veggies don’t take as long to cook as rice
  3. This recipe works with any chopped or riced food. Simply add the spices and let cook – serve hot - enjoy
