One-Pot Riced Cauliflower & Beans (less than 150 calories/serving)

Makes about 4 servings:

Ingredients:

  • 4 cups Riced Cauliflower (Frozen Riced Cauliflower works great)
  • 1 can cooked black beans (can use red beans)
  • 2 tsp Iya Foods One-Pot Riced Cauliflower seasoning
  • 1 tsp Iya Foods Chili pepper ground
  • 1 tsp Iya Foods whole Garlic Ground Recipe
  • ½ cup sweet corn
  • ¼ cup chopped cilantro
  • ½  chopped yellow onion
  • 1 chopped tomato
  • ½ tsp sea salt
  • 2 Tbsp vegetable oil

Instructions:

  1. Heat oil in medium pan
  2. Combine everything in the medium pan
  3. Cover and let simmer for about 10 – 12 mins
  4. Serve hot with avocado slices if desired
