Jollof Rice, Grilled Chicken Piri-Piri and Plantains


  • 3 cups of long grain white rice
  • 1.5 cups Any Tomato Based Simmer Sauce
  • 2 cups chopped spinach, kale or any desired greens
  • 2 tsp Iya Foods Jollof Rice Seasoning
  • ½ tsp Iya Foods Chili Pepper Flakes
  • 1 Tbsp Iya Food Vegetable Mix
  • 2 Tbsp Vegetable Oil or 1 Tbsp Butter
  • 1 tsp salt


Jollof Rice

  1. Rinse rice a couple times and strain to drain water
  2. Combine rice and all the ingredients (except the green veggies) in an Instant Pot or a medium sized pot
  3. Add water at approx. ratio 1.5 water : 1 cup rice
  4. Cover, seal and push ‘Rice’, if your Instant-Pot does not have a ‘rice’ function, select ‘manual’ and then set for 10 mins on high pressure. For medium sized pot, cover and cook for 20 – 30 mins on medium heat. 


  1. You can find plantains at many grocery stores. Buy slightly ripe i.e. plantain peel looks yellow. Half a plantain/person is a good estimate.
  2. Cut open peel and slice plantain about an inch thick (can be any size or shape)
  3. To cook
    1. Broil, grill, roast or bake in oven at 425 for about 15 mins till golden brown. (once done, wrap in foil while still hot so moisture softens the plantain)
    2. Fry in oil for about 5 – 8 mins till golden brown
