Incredible Veggie Fritters or Cutlets

Ingredients:
- 1.5 cups vegetable stock (can use any stock)
- 1 cup Iya Foods Vegetable Mix
- 2 cups fresh chopped vegetables (Broccoli, Cauliflower, Kale or any vegetable mix you prefer)
- 1/2 -3/4 cup Iya Foods Cassava Flour Gluten-Free, Grain-Free
- 1/3 cup Parmesan Cheese (Can swap with dairy free cheese)
- 1 tsp salt
- A pinch Iya Foods Chili Pepper Ground
- A pinch Iya Foods Yellow Habaneros (this pepper is hot, handle with care)
- ¼ teaspoon Iya Foods Whole Garlic Ground
- 3 Tbsp green onions
- 1 large egg, whisked
- 2 Tbsp Avocado Oil (or any oil)
Instructions:
- In medium sized pot, bring vegetable stock and dried vegetable mix to boil
- Then add freshly chopped Veggies - Steam on low for 5 more mins
- Mix in flour, cheese and all the other ingredients, whisked eggs last. If too thick add some water 1 tbsp at a time. If too runny, add some more cassava flour
- Next form fritter mixture into approx. tennis size balls
- Then heat a nonstick skillet with a little avocado oil - Then place fritters balls into pan, flatten with spatula and cook on each side for about 4 mins or until golden brown.
- Transfer to a bowl lined with paper towels to soak up excess oil
Tip –
- Enjoy with a yogurt dip for lower calories and a healthier option
- You can also bake this is a muffin pan
