Fried Brown Rice and Beans Bowl

Makes about 6 servings:
Ingredients:
- 3 cups long grain white or brown rice
- 2 canned black beans (or any beans), drained and rinsed. I cook my beans from scratch with a pressure cooker and store in the freezer for future use
- 1 tsp Iya Foods Spicy Fried Rice seasoning
- 1 tsp Iya Foods Chili pepper ground
- 1 tsp Iya Foods Whole Garlic Ground
- 1 tsp Iya Foods Ginger Ground
- 1 tsp Iya Foods Vegetable Mix
- ½ cup sweet corn
- ½ cup chopped peppers and onions mix
- 1 tsp salt
- 1 Tbsp Avocado oil
- 1 ½ cups chicken stock (can use water)
Instructions:
- Partially cook rice for 15 mins using medium pan, rice cooker or instant pot. 15 mins is good because we want the rice only partially done
- Heat oil in large pan then add partially cooked rice, cooked beans, spices and seasonings, salt and all the other ingredients
- Stir gently and let simmer for about 10 mins
- Serve hot
Tip – You can use an instant pot – just add all the ingredients together and select rice.
Serve with half slice of avocado, some chicken, steak or seafood
