Moist Cassava Beer Brownies

½ cup Iya Foods Cassava Flour
1 cup dark beer – Guinness Stout or any dark stout is a Nigerian favorite
1 stick unsalted butter
1/2 cup real cocoa powder
1.5 cups sugar
3oz chocolate chunks
1 large egg white
1 tsp vanilla extract
A pinch of sea salt
1.Preheat the oven to 325 and grease brownie baking pan.
2.For beer mix–Gently boil beer on low heat for about 25 mins to reduce water content. Set aside to cool
3. Combine the butter, cocoa powder, sugar and chocolate chunks–stir and microwave for about 40 seconds or use stove top for about 5 mins. Set aside to cool
4.Stir all the ingredients in a medium bowl. Pour in pan and bake for 45 minutes or till toothpick doesn’t have runny batter on it (it will have sticky moist batter but that’s perfect).
5. Dust some cocoa powder on it if desired and serves
