Creamy Fonio Pudding (a fun take on rice pudding)

Makes about 4 servings:
Ingredients
- 4 ½ cup milk (can swap with coconut, almond or oat milk)
- ¾ cup Iya Foods Fonio flour
- ½ cup Sugar
- 2 Tbsp Rosewater
- 1 tsp Vanilla Extract
- 1 Tbsp Honey (can swap with pure Maple Syrup)
- 1 Tbsp butter
- Topping
- 4 ounces Almonds
- ½ tsp Ground cinnamon
- 4 cinnamon sticks
Instructions
- In small bowl slowly whisk fonio flour into approx. half cup of milk (make sure no lumps).
- In separate pot and on low heat slowly bring to boil the rest of the milk and sugar. Once mix comes to a boil, stir in butter and then stir in the fonio flour & milk mix. Stir well to avoid lumps
- On low heat cook pudding for approx. 5 mins. Then gently stir in honey, vanilla extract and rosewater.
- Pour into pudding bowls, let cool and refrigerate for about 2 hours
- Serve cool topped with almonds and sprinkled cinnamon
