Cassava Pancakes

 

Gourmet Pancake Recipe

Ingredients (4-6 Servings):

  • 2 cups cassava flour
  • 1 cup vanilla yogurt
  • 1 cup low fat milk
  • 2 eggs
  • 2 Tbsp oil or melted unsalted butter
  • 2 Tbsp of pure grade Maple syrup
  • 2 tsp sugar 
  • 2 tsp baking powder
  • ¼  tsp sea salt
  • ¼ tsp cinnamon 

Instructions:

  1. Mix all ingredients in a mixer or bowl
  2. Heat up gridle or pan. Add some water if too thick or more cassava flour if too runny.
  3. Pour in griddle and leave for about 3 mins on each side till golden brown
  4. Serve hot with your favorite toppings
